Keto bacon and chicken Kyiv

  • 4 boneless, skinless chicken breasts
  • 8 slices of bacon
  • Salt and pepper, to taste

For the Herb Butter:

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

For the Coating:

  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

For Frying:

  • 1/2 cup avocado oil or other keto-friendly oil

  1. Preheat your oven to 375°F (190°C).
  2. To make the herb butter, combine the softened butter, parsley, dill, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well until all the ingredients are thoroughly combined. Set aside.
  3. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season the chicken breasts with salt and pepper on both sides.
  4. Spread a generous amount of the herb butter on each chicken breast, leaving a small border around the edges. Roll up the chicken breasts tightly, ensuring that the butter remains inside.
  5. Take two slices of bacon and wrap them around each rolled chicken breast, securing them with toothpicks if needed. Repeat the process for all the chicken breasts.
  6. In a shallow dish, combine the almond flour, grated Parmesan cheese, paprika, garlic powder, salt, and pepper. Mix well.
  7. Roll each bacon-wrapped chicken breast in the coating mixture, pressing gently to ensure it adheres well. Make sure to coat all sides evenly.
  8. Heat the avocado oil or other keto-friendly oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the coated chicken breasts to the skillet and cook until the bacon becomes crispy, about 3-4 minutes per side.
  9. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  10. Once cooked, remove the chicken Kyiv from the oven and let it rest for a few minutes. Remove the toothpicks before serving.
  11. Serve the Keto Bacon and Chicken Kyiv hot with your choice of side dishes, such as cauliflower rice or steamed vegetables.

Enjoy this delectable Keto Bacon and Chicken Kyiv, where the crispy bacon crust perfectly complements the juicy chicken and the herb-infused buttery center. It’s a keto-friendly twist on a classic dish that will leave you fully satisfied while keeping your carb intake in check.
