  • 2 tablespoons fresh dill, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

For the Coating:

  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

For Frying:

  • 1/2 cup avocado oil or other keto-friendly oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. To make the herb butter, combine the softened butter, parsley, dill, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well until all the ingredients are thoroughly combined. Set aside.
  3. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season the chicken breasts with salt and pepper on both sides.
  4. Spread a generous amount of the herb butter on each chicken breast, leaving a small border around the edges. Roll up the chicken breasts tightly, ensuring that the butter remains inside.
  5. Take two slices of bacon and wrap them around each rolled chicken breast, securing them with toothpicks if needed. Repeat the process for all the chicken breasts.
